Observation (CORRECTED DURING INSPECTION): Observed staff to be using water to sanitize steam wand and wipe counters. When asked staff to fill insert with sanitizer, he filled with glass cleaner instead. Other bucket of sanitizer was measured at 50ppm.
Corrective Action(s): Reviewed difference between cleaner and sanitizer with staff; you must use sanitizer on food contact surfaces at all times. 200ppm quats obtained for both inserts.

Observation: Dipper well turned off due to leak from adjacent cooler on same line. Said cooler has been freezing instead of cooling.
Corrective Action(s): Both dipper well and cooler needs to be repaired immeidately.

Comments

Hot water tap measured at 47-48C for both sinks.
Dishwasher was measured at 72.6C at plate. This loaner unit shall be used from now on.
Ensure to test dishwasher daily using thermometer present.
You may use this dishwasher now.
Pastry case ordered to be replaced so that there is door available.
Directed operator to reorganize sandwich cooler using FIFO system.
Do not use the top half of sandwich cooler to store food as it is measured at 15-20C today.
