Front prep cooler is now maintaining 4°C or below. Internal temperature of pineapple stored in the top insert registered 3.9°C. No proteins were stored in this cooler at the time of inspection

According to the operator, front cooler will only be used for veggies & dressing
All proteins are stored in the under-counter cooler located next to the cash register (4°C)
*Ensure to monitor & record temps for both coolers twice/day
