Observation:
1. Some food items in walk-in freezer have fallen on or under storage racks.
2. Floor needs to be cleaned in front area.
3. Clean hard to reach areas, including under and behind all equipment in front area (e.g. coffee machines).
Corrective Action(s):
1. Sweep inside walk-in freezer and remember to discard any food items that have fallen out of their packaging.
2. Clean floor and increase frequency of sweeping, especially after a big rush.
3. Clean hard to reach areas more frequently so there is no accumulation of dust and debris.

All to be corrected starting today.

Routine Inspection:
- All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- All food products covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- QUAT sanitizer in buckets = 200 ppm. Wiping cloths stored in sanitizer solution - good.
- QUAT sanitizer at dispenser for 3-compartment sink = 200 ppm.
- High temperature dishwasher sanitizing dishes with >71 degrees Celsius at dish level for final rinse.
REMINDER: clean propellers of dishwasher frequently.
- No signs of pest activity at the time of inspection.
