Observation (CORRECTED DURING INSPECTION): Knife in wall knife holder observed soiled with food debris.
Corrective Action(s): All food equipment, food utensils and food contact surfaces must be cleaned of all debris, then sanitized after use. Food equipment, utensils and work surfaces in constant use for the same purpose must be cleaned and sanitized a minimum of every 4 hours or when changing uses.
All food equipment and utensils where possible are to be cleaned and sanitized after use, using the dishwasher equipment.

Observation (CORRECTED DURING INSPECTION): Frozen chicken pieces defrosted in dishwashing sinks - adjacent drained board contained 4 bottles of detergent and bleach and adjacent sink compartment filled with soiled dishware.
Corrective Action(s): When using cold running water to defrost frozen food items; use food preparation sink in kitchen, ensure the sink is clean prior to using for food handling and ensure sources of contamination such as chemicals or soiled food equipment cannot potentially contaminate food.

Operator relocated defrosting chicken during inspection.

Observation: 2 heavily worn metal strainers on cooking line small pieces of metal wire loose and could easily break off and contaminate food.
Counter top plastic cutting board and prep cooler plastic cutting board are heavily worn and stained with food debris and cannot be properly cleaned.
Corrective Action(s): Discard and replace both metal strainers.
