Observation (CORRECTED DURING INSPECTION): A variety of different meats thawed in common environment in food prep sinks (chicken/shrimp). Cleaning and sanitizing in-between uses not being followed.
Corrective Action(s): Keep seafood and non-seafood thawing processes separated. Ensure sinks are cleaned and sanitized after each food type.

Observation: No clearly defined cleaning schedule for staff to follow and to ensure accountability for necessary detail to cleaning and sanitizing responsibility.
Corrective Action(s): Implement a cleaning schedule checklist that staff can see and is sufficiently detailed to ensure proper cleaning and facility maintenance.
** This is essential to avoid further issues.

Observation: Drain fly and fly infestation problem observed.
Corrective Action(s): - Complete clean up as noted in this inspection report.
- Have Pest Control re-visit (after clean-up) to re-apply appropriate product to all problem areas including but not limited to floor drains.
- Discuss with pest control contractor alternative products and necessary application frequency to break drain fly breedig cycle. Also ask about floor detergent/degreaser foamer for additional degreasing needed in this facility.
**Improve cleaning (quality and frequency) in high water traffic areas including dishwash, handwash, food prep sinks, as well as area behind broth sinks.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Premises suffering an accumulation of food debris in many areas and is not being adequately cleaned. The following areas include, but are not limited to:
- Dishwash and food prep sinks;
- Walk-in cooler including shelves;
- Laundry area;
- walls adjacent to food prep counters/work surfaces (chopping blocks etc.)
- Doors to cooling units including slides and magnetic seals on doors;
- internal cavity to cooling units;
- floor in entire kitchen area;
Corrective Action(s): Clean all identified areas noted above and related by the re-inspection date noted on this report.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Wood chopping blocks (2) equipped with knife-holders that can't be properly cleaned. Servery cup cupboard deteriorated.
Corrective Action(s): Remove knife holder from chopping block and discard/replace. Discard cupboard.
**Both chopping blocks require thorough cleaning.

Comments

- Eliminate the use of garden hoses for food purposes (broths etc.). Use only food grade hoses for such purposes.
- Ensure records kept for the live fish holding component of facility - To deliver guidelines to support this activity.
- Construction related issues exist in parts of the kitchen environment including the dishwash sinks, some select walls and work surfaces (as discussed with operator). Consider a plan in the next six months to repair physical components of facility to make minimum maintenance requirements more achievable. Submit this plan in writing to this office.
