Observation: Puratos cremfil silk indicates product requires refrigeration after opening. Open product stored at room temperature. Pastries filled with product stored at room temperature.
Correction: Provide product information from manufacturer that filling does not require refrigeration for food safety purposes or select an alternate product that does not indicate refrigerate after opening on the label.

Hot holding case - top shelf pastries probed by staff, internal temperature 60 C

Dry storage room - door sweep installed to exclude pest entry.

Conduit openings behind packaging device have been sealed off.

Required premise cleaning conducted. Ensure cleaning is conducted on a daily basis to maintain sanitation and discourage pest activity.

Back kitchen - milk crates removed, additional wheeled cart provided to supplement storage and allow for ease of cleaning area.

Custard filling discussed with supervisor.
