Observation: Extensive water leaks noticed from the line cooler across from the deep fryer ( raw poultry and meats prep cooler).
Corrective Action(s): Service or repair the cooler to fix the source of water leak/extensive condensation ( by Jan. 13, 2020).

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Hand wash sink along the back prep line is not in working order. Food handlers are using the food prep sink for washing their hands.
Correction: Repair the hand wash sink so that this designated hand wash station is avaialble for staff to use ( immediately).

Follow up inspection:
Floor underneath the main cook line has been cleaned, however heavy grease build up under the deep fryers still require cleaning.
Floor in the dry storage room has been cleaned.
D10 sanitizer test strips are now available. Ensure to monitor and record the quats sanitizer concentration daily.

* Replace both cutting boards as they are hard to properly clean and sanitize. ( By January 20, 2020).
