Observation:
This is a repeat violation. The following areas have not been cleaned as per the last inspection report's corrective actions:
- Grease build-up underneath deep fryer unit.
- Water pooling around hot water tank.
- Burnt residue build up on gas stove.
- Grease build up on vent hood panels.
Corrective Action(s): - Operator stated a professional company will be coming in tonight to clean the floor, vent hood panels and the gas stove. Ensure the floor around the hot water tank is wiped up as well.

Comments

The following corrections have been made:
- Dishwasher was serviced - operator stated that the dishwasher is in fact a low temperature dishwasher. No chlorine was detected using the test strips during the last inspection and no sanitizer bucket was observed as well. New bottle of sanitizer connected to the dishwasher was observed today. After 2nd run, the temperature measured at 48C and the chlorine level was measured at 50ppm with test strips.
- 100ppm chlorine sanitizer was available in spray bottles for the front and the back - the bottles were labelled as "sanitizer" at the time of inspection.
- Kitchen sink caulking was re-done and the faucet is now secure. 2 compartment sink's facet will be repaired next Monday as per the operator.
- Door sweep was installed for the back screen door.
- Ice machine was cleaned.
- Oily cardboards were removed.
- New cooking pans were purchased. Remaining pots & pans are cleaned. Ensure to clean them every day to prevent hard-to-remove debris build up.

Ensure the uncorrected items are addressed by today. Continue to work on the sanitation of the store by regularly cleaning and sanitizing surfaces prone to dust & mould build up (sink edges, caulking, rubber seals of coolers & fridge). Clean the pots & pans lids as well to remove sticky residues.
