Observation (CORRECTED DURING INSPECTION): No sanitizer was available and none of the staff understood what sanitizer was. 100ppm chlorine sanitizer (1teaspoon of bleach per 1L water) was made at the time of inspection.
Corrective Action(s): Ensure to prepare fresh sanitizer at the beginning of each shift to sanitize food contact surfaces prior to handling foods.

- Temperatures of refrigeration units are adequate (4C coolers, -18C freezer) and coolers are equipped with thermometers
- Ensure to be more consistent with temperature recordkeeping (keep the record for at least 6 months)
- Low temp dishwasher achieved 50ppm chlorine residual at the end of cycle
- General sanitation is satisfactory
- No signs of pest activity noted at the time of inspection

NOTE:
- Observed knives hanging on racks without protection. Ensure to store knives protected from contamination.
