302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1- Food containers and other food contact surfaces are not sanitized properly. When asked about dishwashing procedure, Staff did not know how to sanitize dishware and containers.
2- Operator using Nutra QUAT sanitizer spray for food contact surfaces. This sanitizer concentration is well above 600ppm. This is a repeated violation! Further enforcement may be required if not corrected.
Corrective Action(s): 1- Follow proper procedure for manual warewashing as discussed and demostrated in FH poster provided. Ensure to sanitize with 50-100 ppm chlorine. Soak dishware in the solution and then air dry. Demostrate this practice to your new staff. Ensure proper sanitation procedure is followed.
Wash and sanitize all dishware used for food preparation immediately.

Observation (CORRECTED DURING INSPECTION): Several food containers observed to be double stacked in cooler with inserts. The bottom of containers touch ready to eat/vegetables. This increases the risk of fooc contamination. Food observed to be warmer than 4C. Operator removed the double stacked container and transfered to other cooler.
Corrective Action(s): Ensure food is kept at 4C(40F) or colder. Do not double stack containers where food is unprotected

Observation: Dust and grease build-up observed above the cooler and the cook line.
Corrective Action(s): Clean dust from the wall right above the cooler with inserts. Clean grease build-up on vent/exhaust above the cook line

Routine inspection

- Hand washing station are supplied with hot/cold running water, liquid soap and single use paper towels.
- All coolers are at or below 4C. Note: walk in cooler's thermometer observed to display the temperature at 6C. Ensure to monitor the temperature for this cooling unit and take action when needed.
- Chest freezer is at -18 or colder. food is frozen to touch.
- Hot holding for soap and rice measured at 60C or hotter.
Reminder: Temperature monitoring log is to be kept updated. Measure critical cooling/hot holding temperatures twice daily.
- No obvious sign of pest activity at this date.
- Food stored off the floor in sanitary condition. Ice machine is clean and ice scoop stored in sanitary condition.
- Ice well kept clean. Ensure to store ice scoop outside in separate container.
- Staff hand washing was observed.
