Observation (CORRECTED DURING INSPECTION): 1. Glass washer near the kitchen measured with 0 ppm iodine solution. Stock iodine solution bottle was empty.
2. Two sanitizing spray bottles used at the bar area measured with 50-100 ppm quats solution. Staff stated the bottle was emptied and refilled every 3 days.
Corrective Action(s): 1. Staff replaced the stock iodine solution. Iodine concentration measured at this glass washer was 25 ppm. Clean and sanitize all glasses ran through this glass washer this morning.
2. Staff discarded and refilled the sanitizing spray bottle with 200 ppm quats sanitizer. Discussed with the manager to increase the frequency of replacing quats solution in the bottle as its concentration lowers over time. Use the quats test strips to verify the concentration and establish a schedule.

- Coolers (walk-in, preparation, drawer, glass door and bar) maintained at 4C or less.
- Freezers (Up-right and walk-in) maintained at -18C or less.
- Hot potentially hazardous food hot held at above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 76C at the plate level.
- The other glass washer dispensed 12.5 ppm iodine at the plate level.
- 200 ppm quats solution available in spray bottles and from the dispenser for the kitchen area.
- Meat slicer and ice machine maintained in a sanitary condition.
- Food stored off the ground and organized..
- Temperature logs maintained and available for review.
