Observation (CORRECTED DURING INSPECTION): Used pizza cutters were stored in a container at room temperature.
Corrective Action(s): Ensure pizza cutters (and other utensils that come in contact with food) are washed and sanitized / replaced every 2 hours, or stored inside the cooler or on ice (at less than 4C), or kept at temperatures over 60C, to prevent the growth of pathogens and accumulation of toxins which can lead to foodborne illness. Operator mentioned that they replace the cutters every two hours, but no time stamp was available on the container and no log was being maintained. The cutters were taken to the dishwashing area at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Cardboard was being used to line the floor around the back door.
Corrective Action(s): The manager removed the cardboard at the time of the inspection. Cardboard is not a smooth and easy to clean material, it can absorb contaminants and attract pests, and pose a tripping/slipping hazard.

Comments

Temperatures:
Coolers were maintaining 4 degrees Celsius or less.
Temperature logs were up to date.

Sanitation:
All hand sinks were stocked with hot and cold running water, liquid soap, and paper towels.
Staff hygiene and food handling practices appeared satisfactory. Staff member making pizza was observed for handwashing.
General sanitation is good.
QUATS sanitizer spray bottles are labelled with a time stamp. Tested at 200 ppm. Sanitizer dispenser was also at 200 ppm QUATS.
3-compartment sink is equipped with plugs.

General:
Chemicals were stored in a safe manner under sinks and away from food items.
Washrooms were in satisfactory sanitary condition.
All lights were functional.
Operator and staff had valid Food Safe level 1 certifications available on site. Manager's certificate valid until 2025.

Pest Control:
Facility is monitored by a professional pest control company.
No pest activity was noted during the inspection.
