311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: A) New triple sink installation incomplete. Sanitizer concentrate line to injector runs over the thrid sink. This could become easily damaged and result in altering the feed system and the concentrate feeding the system.
B) Mop sink surrounding wall is damaged or partially cut for cleanout access. Water could spill behind wall causing mould growth or wall deterioration.
Corrective Action(s): A) Move concentrate to basket wall above sink area to relocate transport tube to safer place. This relocation will assist with a more consistent feed of concentrate through system.
NOTE: Add shelving unit in cavity space where old dishwasher was located to get the other chemical containers, and equipment needed for dishwashing off the floor and into a more organized space.
B) Fix wall surrounding mop sink or add proper cover plate for clean out access.
Above work will be reviewed at next scheduled inspection for completion.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher is broken again. Observed leaking all over floor at dishwash station. Staff not using. Only 2 compartment sink available for ware washing. Implementing 2 sink method of dishwashing only acceptable as a temporary basis.
Correction: Implement 2 sink manual dishwashing for now ensuring staff are properly implementing proper manual 2 sink dishwashing techniques. Repair or replace unit as long-term solution. Alternatively, remove dishwasher completely and switch to 3 compartment sink and implement proper wash rinse sanitize and air dry techniques through 4 step process.
**Re-inspection in ten days. Send plan of action related to long-term solution for this unit.

Dishwasher removed in favour of a three compartment sink. Install ok, except the sanitizer concentrate hose runs overtop of third sink.

Cooling units less than 4 C.
Freezers ranged from -7 to -18 C.
**Monitor temp logs to ensure proper freezing temperature of -18 C is maintained during non-delivery times and/or heavy operational periods.
Sanitizer concentration in third sink at 200 ppm Quats. OK. Three compartment dishwashing sign left to replace old two compartment sink methods.

Lids and containers for smoothies look better and cleaner.
