304 - Premises not free of pests [s. 26(a)] Observation: Cotton Candy Station: -Small black rodent droppings observed under 2 prep tables near the back wall -Droppings observed along the wall -Trail of droppings observed from station over to fudge making fridge and station Back storage: -Droppings near rolling doors that lead to outside - both larger size droppings and smaller droppings -sticky traps do not show anything and may not be appropriate for larger rodents Minimal droppings (1-2 isolated few) near Popcorn Station along the wall. Fruit flies around laundry basket storage (for dirty cloths) and decor storage area (front). Corrective Action(s): Clean and sanitize Cotton Candy Station thoroughly. Pull out all prep tables and clean droppings underneath. Wear Personal Protective Equipment (masks, gloves, goggles, etc.) while cleaning droppings - follow work safety procedures for rodent dropping clean up. Place all cotton candy sugar and any other bagged, plastic wrapped or paper packaged food items into pest proof containers that have good sealing lids. Remove any equipment and clean/sanitize at and of day. Call pest control contractor for a service and follow pest management plan for facility. Increase monitoring. Recommend other, more sturdy traps other than paper sticky traps, especially around entrances at the back. Droppings visible around the trap on either side, which shows that traps are not working. Fruit flies - remove soiled laundry daily, clean wall and floors around laundry. Clean laundry cloth basket AND laundry inside. Recommend traps for flies such as a light trap or tape - speak to your contractor for more suggestions. Date to be completed by: Today. Violation Score: 9

Hand wash stations are supplied at entrances, hot and cold running water, liquid soap and paper towel in dispensers. Separate staff washroom is also well supplied. Hair nets are worn by staff. Employee change area near hand wash station. Aprons - black are worn. Would recommend light color aprons so soil and food residue is visible and evident when it needs changing. Work stations that are actively being used appear organized. Tables and surfaces are in good repair, stainless steel counter tops. Rolling racks are covered at end of night to protect from contamination. Majority of food items (candy, nuts, sugar) are covered by lidded containers or stored inside cabinets, organized and labelled. Fridge <4C. Product is covered in the walk in cooler.
