Follow-up inspection conducted for inspection report# KLAI-CFSSM4
In general, all food in the walk-in cooler were stored protected at the time of inspection.
Missing light shields replaced - no exposed light fixtures were noted.
Improvement in sanitation noted. Sanitation improved for the wall below the preparation table, fume hood above the ovens and floor of the walk-in cooler. Minor cleanliness issue still noted in the interior of the 3-door refrigerator - operator cleaned the unit during the inspection.
The rinse temperature gauge in the back of house high temperature dish machine was fixed. Rinse gauge was able to display 183F (83C) when the temperature at the plate level was able to reach 76.1C.
Note: Dicer was in use at the time of inspection - unable to evaluate.

Outstanding violation from the last routine inspection: The bar high temperature dish machine still noted with a broken rinse temperature gauge. As per operator, they are awaiting a part to fix the gauge. Note: The bar high temperature dish machine was able to reach 73.0C during the inspection, only the gauge is broken. Advised the operator to purchase a water proof thermometer as it should be a part of their opening and mid-day procedure to check the final rinse temperature of their dish machines to ensure they are properly sanitizing all dishwares before use. If the gauge is broken, then how is the staff able to check whether the machine is working properly before use.
Also noted during this inspection, black organic buildup noted on the blue ice bin noted for hoses in the walk-in cooler. Please clean and maintain in a sanitary condition.
