Prep cooler - top inserts no longer double stacked on top and individual inserts are not overfilled above fill lines. Wiping rags in use stored in dilute bleach sanitizer solution. Corner handsink fully accessable. Newsprint removed from shelves and counters around deep fryer. Opened take-out containers stored upside down. Rice scoop stored dry. Sushi knives stored in refrigerated water. Reviewed proper defrosting procedure.
