*Follow-up inspection for issues listed in last report.
*Both under-counter coolers have been repaired. Units operating at or below 4 C (after adjustment during inspection). Food can now be safely stored in these coolers. Ensure daily temperature checks are made and recorded, and that any temperatures above 4 C are dealt with according to your approved food safety plan.
*Ensure cooler thermometers are placed somewhere in the middle/towards the front of the coolers, and not at the very back - this will provide a more accurate average temperature reading for each unit.
*Rice is now being cooled in smaller insert containers - continue this practice, and ensure all cooling food follows the 6-hour total time/temperature rule, as discussed at the last inspection.
*No other concerns at this time.
