Observation: Pot of cooked soup placed outside in receiving hallway to cool.
Corrective Action(s): Cooked foods must be rapidly cooled using a combination of small portioning of food, shallow metal containers and use of an ice bath or equivalent method.
Foods must cool from 60 C to 20 C in less than 2 hours and following, from 20 C to 4 C in less than 4 hours.
Cooling rates must be verified using a probe thermometer and documented by staff according to premise Food Safety Plan.

Food safety plan does not address cooling of batch cooked food product. Discontinue all cooking and cooling of batch food product.

Observation (CORRECTED DURING INSPECTION): 2 cartons of shell eggs stored in reused egg cartons for labelled expired eggs.
Corrective Action(s): Product discarded.
All food product is to be obtained from an approved supplier, with proof of receipt and in new accurately labelled packaging.

Observation: Repeat violation:
Food product (open pot of soup, bucket of pickles) stored in outside receiving hallway.
Deli meat stored in freezer with no packaging in contact with bag of raw chicken.
Container of raw ground meat covered with plastic bag.
Corrective Action(s): Food items / food containers are to be stored off the floor. Foods should be placed on shelves that provide 6” clearance from the floor.
Food items / food containers when stored are to be properly covered to protect from contamination using fitted lids or single use plastic wrap / metal foil.
Do not use garbage bags to cover food, they may contain chemicals not are not considered food grade.

Observation: Repeat violation:
Multiple cooked foods using oil, pan frying and large volumes of raw meat in the absence of adequate ventilation system.

4 containers of cooked perogies in chicken fat.
Soiled cooking pot with grease build-up in bottom.

Corrective Action(s): As previously and repeatedly discussed and described on prior inspection reports: Due to lack of adquate ventilation the Permit to Operate has been assigned a condition of No Production of Grease Laden Vapors.
All cooking equipment and food ingredients described above are to be removed from the premise.
All preparation of cooking meats, cooking with oil and pan frying is to discontinue permanently.
Stove top oven to be removed from premise.
