304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse droppings and gnawed materials noted on floor in corner near back door.
- Mouse droppings noted on floor along back hallway and in washrooms in areas where coving is removed from wall.
- Dead mouse noted in back hallway.
- Mouse droppings noted on shelving under POS and on sheving where used receipt tape is stored.
Corrective Action(s): - Clean up/remove all droppings and dead mouse from premises. Sanitize areas. To be completed: today
- Continue to monitor for any further activity (droppings) and clean up immediately if noted.
- Have qualified Pest Control Technician attend premises to place additional traps and identify any entrance points or harbourage areas. Provide copy of pest control contract and service report to EHO at follow up inspection on 02-Nov-2022
- Follow all recommendations of Pest Control Technician

Observation: - Gap noted at back door
- Hole in wall present near mop sink (appears to be to access plumbing)
- Baseboard/coving not affixed to wall in sections in both washrooms where there appears to be entrance point
- Coving missing on wall adjacent to back door where there appears to be an entrance point
- Boxes stored on floor in back hallway creating runways for rodents
Corrective Action(s): - Replace weather stripping at back door
- Cover hole in wall. Metal access plate can be used to allow for access to plumbing if needed
- Fill all holes and reafix or replace coving - use rodent proof materials such as steel wool or metal plates.
- Store all items on shelving off of the floor. Keep floor area clear to facilitate cleaning and monitoring for pest activity

Observation: - Grease/debris noted on lower shelf of hot holding unit
- Grime, debris, soiled cloth noted on floor under rational ovens. This is a repeat issue.
Corrective Action(s): - Clean above noted areas to remove all grime, grease, and debris. To be corrected by: 02-Nov-2022
- As noted in code 311, flooring under rational ovens requires repair so that it is smooth, impervious, and capable of being maintained in sanitary condition.

Observation: - Bait boxes with rodenticide present in staff/public washroom and back hallway of food premises. One chewed package of rodenticide present in washroom. Use of rodenticide within food premises is not acceptable.
Corrective Action(s): - Immediately remove rodenticide from premises. Replace with traps for rodent control. To be corrected: today

Observation: Flooring under rational ovens is unfinished and not able to be effectively cleaned/maintained in sanitary condition. This was identified at previous routine inspection and not completed.
Corrective Action(s): Repair/replace section of flooring under rational ovens so that the surface is durable, impervious and washable. Ensure elevation is level/continuous with existing flooring in premises so that there are no gaps where food or debris can collect. To be corrected by: 28-Nov-2022

Comments

Handsinks in front service area and back prep area and in staff/public washrooms supplied with hot and cold running water, liquid soap and paper towel.
- Coolers were operating at 4C or colder:
- Walk-in cooler 4C
- Line cooler 3C
- Beverage cooler 1C
- Freezers maintaining product in a frozen state
- 2 door reach in freezer -18C
- Single door freezer -17C
- Food in steam table maintained at >60C. Potatoes 65C, Lamb 71C
- Dishwasher operational. >50ppm chlorine detected on dish after cycle.
- Food contact surfaces appear clean and maintained. Bleach sanitizer solution (200ppm chlorine) present with in use wiping cloth kept in solution.
- Manager reported they have valid Foodsafe level 1 certificate (completed in 2018) - to be verified.
