NOTE: ensure not to store goods directly on the floor but to use your available shelves >15cm off the ground -this includes walk-in coolers/freezers, under shelves -this will facilitate cleaning and monitoring for pests

In-Use Utensils must be dishwashed minimum every 4 hours

-ensure you have a pest monitoring program in place -mechanical traps (ie. sticky, snap, live traps) -Professional pest control is recommended

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
