Observation: Observed high temperature dishwasher reaching a temperature of less than 71C at plate surface - 65C.
Correction: Ensure high temperature dishwasher is capable of reaching a temperature of 82C/180F at plate surface for proper sanitizing of dishware.
Tecnician called during inspection. Operator will be adding container for bleach sanitizer step and/or connecting chemical (bleach) to run through sanitize cycle as a temporary measure.
Correct by: Immediately.
