Observation: Low temp dishwasher in the bar is unable to produce adequate chlorine at plate's surface (0ppm chlorine). High temp dishwaser in the kitchen is unable to reach 71C at plate's surface (69.9C for all 4 cycles). The operator called for service during inspection.
Corrective Action(s): Ensure that the low temp dishwasher in the bar is able to produce 50-100ppm chlorine at plate's surface. Ensure that the high temp dishwasher reached 71C at minimum at plate's surface after each cycle.

- Handsinks are maintained with hot & cold running water, liquid soap & paper towels
- Walk in cooler & upright coolers measured <4C
- Line coolers had been unplugged to clean water spill by condenser. Monitor the temperatures to ensure that the coolers are able to maintain 4C.
- Freezers measured <-18C
- Hot held foods measured >60C
- 200ppm QUAT sanitizer available
- Foods are stored off of floor and in a manner that prevents cross-contamination (meats stored away from other produce)
- No pest activity noted at the time of inspection
- General sanitation is satisfactory, but deep cleaning is required under coolers, cabinets, shelves. Observed some food debris.
- Bar area is kept clean. Ice scoop maintained in a sanitary manner.
