Observation (CORRECTED DURING INSPECTION):
The 2 handwashing sinks in the kitchen were blocked with food containers and lids in the sink basin. Staff are unable or encouraged to wash their hands when the sink is not accessible at all times.
Corrective Action(s):
Remove all items inside and on top of the sink basin, and remind staff not to block the sinks. During the inspection, all items were removed and the handsinks were accessible.

209 - Food not protected from contamination [s. 12(a)]
Observation:
1) Found open tin can of Oyster sauce being stored at room temperature and the sauce is remaining in the tin can. The is unsafe, as bacteria can grow in the unsealed sauce and metal/rust can contaminate food as it's stored in the tin can.
2) Packages of food and/or food contact items (containers, etc) are being gnawed by rodents. The foods and food contact items could be contaminated by bacteria from the rodents hands and mouth.
Corrective Action(s):
1) Immediately transfer the Oyster sauce into a food grade container (stainless steel, hard plastic or glass) and cover with a lid, and store in the fridge at all times. During the inspection, staff transferred the sauce into a food grade container.
2) Immediately throw away all packages of food and items that will contact food, that have been gnawed on and/or droppings have come into contact with. Purchase large, hard plastic containers with tight fitting lids. Store all packages of food and food contact items in plastic containers and cover with lid to prevent rodents accessing these items.

Observation:
Mice droppings found in the dry storage room and near the bag of rice in the cook station area. Mice and their droppings contain germs which could contaminate foods.
Corrective Action(s):
- Clean up the droppings and sanitize all surfaces and ares that came into contact with the droppings.
- Increase the frequency the pest company is servicing the premises, every 2 weeks.
- Follow all recommendations and instructions the pest company provides.
- Continue to keep up the sanitation level of the premises.
- Store all packages of food, and items that will touch food (take-out containers, chop sticks, etc.) in tight fitting, hard plastic containers.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The dry storage room has food debris and rodent droppings on the floor under shelving racks and pallets, and on the shelves. Food debris will attract pests, and droppings could contaminate food.
2) There is accumulated dust on the ceiling tiles and around air diffusers. The dust could fall into food.
3) The exhaust hood and filters have accumulated grease. The service sticker indicated a professional cleaning should of been done in June 2023. Accumulation of grease could drop into food and it is a fire hazard.
Corrective Action(s):
1) A thorough, deep cleaning of the dry storage room is needed. Remove all items off the floor and shleves, and remove the pallets from the room. Scrub and clean the floor and shelves to remove food and droppings.

2) Wash the ceiling tiles to remove the dust. Ensure this is done on a regular basis.

Observation (CORRECTED DURING INSPECTION):
The low temperature dishwasher had a [Cl2] of 0ppm, dishes are not being sanitized. Owner called a repair company who stated they will arrive today in 1-2 hours to fix.
Corrective Action(s):
Immediately stop using the dishwasher and set dirty dishes aside until the dishwasher is fixed. Or, run the dishes through the dishwasher and manually sanitize the dishes in the 1-comp sink beside the dishwasher. At time of inspection, staff are collecting dirty dishes and will run them through the dishwasher once it is fixed.
**A follow-up inspection will occur later today, to ensure the dishwasher has been fixed**

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; thermometers present.
- Low temperature dishwasher had [Cl2] of 0ppm, test strips present. A repair company will be arriving today to fix the problem.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves, racks, or pallets.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory, improvement needed in the mentioned areas.
- Rodent activity observed. Professional pest company contracted on a monthly basis to monitor and eliminate pests. Pest technician will be rodent proofing and trapping rodents in the dry storage room on Dec. 5/23. Staff have been instructed to remove all foods, shelving racks and pallets, and to thoroughly clean the floor prior to Dec. 5/23.
- Bleach sanitizer in cloth buckets had [Cl2] of 200ppm. Quats sanitizer in spray bottles had strength of 200ppm.
- Valid, FoodSafe certified staff present.
- Surfaces and equipment are in good working order.

**A follow-up inspection will occur at 3pm today, to ensure the low temperature dishwasher has a [Cl2] between 50-100ppm. Failure to have the dishwasher fixed, will result in the closure of the premises.**
