Observation (CORRECTED DURING INSPECTION): Surface sanitizer not prepared.
Corrective Action(s): Operator made a sanitizer solution of 200 ppm chlorine. Ensure sanitizer is prepared during opening and available at all times. Sanitize all surfaces prior to use.

Observation: Build-up of food debris and behind and underneath equipment and dust build up in storage areas. Mould around the 3 compartment sink.
Corrective Action(s): Thoroughly clean all areas of premises including all storage areas so that everything is visibly clean. Remove mould and sanitize.

Observation: Doors of 4 door undercounter cooler are falling apart and seals need to be replaced.

Routine Inspection
Hand sink equipped with hot/cold running water, liquid soap and single-use towels.
Coolers at 4 C or below.
Chest freezers at -18 C or below.
Standing freezer at -6 C - operator is waiting for it to be serviced.
Dishwasher not in use as premises is closed for dine-in. Dishwasher must be in use when premises re-opens for dine-in. Operator was able to correctly demonstrate manual dishwashing procedures.
Reminder:
1. All potentially hazardous foods must be put away immediately. Do not leave them at room temperature.
2. Fish must be thawed in cold water that is changed every 30 minutes, under cold running water, in the cooler or in the microwave.
