Cleaning done on the exhaust hood and kitchen floor.
->More cleaning to be done behind chest freezer in the dining area as well as floor of walk-in cooler (apples fallen).
Reminder to cover all foods in walk-in cooler.
All frozen food has been transferred from grocery bags to food grade bags.
Sweet and sour sauce and lemon sauce both held over 60C on stove.
Display thermometer in the prep cooler; probe thermometer ordered online but has not arrived.
->Ensure the probe thermometer has NSF logo on there as discussed and use this thermometer to check food temperatures daily.
Bigger new lid obtained for bulk rice - ensure it is cleaned regularly.
Plastic bag and duct tape removed from side of reach in cooler.
Additional metal door sweep added to back door but requires the back door to be fully shut to ensure there is no entry point.
