Observation (CORRECTED DURING INSPECTION): Noted container of marinated duck stew in pot at approx 22C at room temperature. Operator said he is letting it marinate and cooked it in the afternoon. Cooked/cooled duck was discarded at time of inspection.
Corrective Action(s): Reviewed proper cooling procedures with operator at time of inspection. Ensure foods are cooled from 60C to 20C (at room temperature) within 2 hrs. Use ice bath, ice wand, prechilled shallow containers...etc to facilitate cooling process. Then transfer foods into cooler unit to cool from 20C to 4C within 4 hours. Potentially hazardous foods are not to exceed two hours at room temperature. Submit food safety plan for this menu item.

General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Meat slicer appeared clean at time of inspection.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods were off the ground and covered.
