Observation (CORRECTED DURING INSPECTION): Creamy custard buns were observed to be uncovered in the hot holding area and had an internal temperature of 45 C.
Corrective Action(s): Discarded. Ensure that all foods are kept > 60 C at all times.

Observation (CORRECTED DURING INSPECTION): A sanitizer solution for food contact surfaces was not prepared when the inspection started.
Corrective Action(s): A 100 ppm bleach solution was made during the inspection. Ensure that a food contact surface sanitizer solution is always prepared and ready for use.

Observation: Droppings found in the cupboard underneath the corner sink and on the floor in the storage room.
Corrective Action(s): Complete the following within one week:
1) Have a professional pest control company on site and provide the report.
2) Clean all droppings with a 1 tsp per liter bleach solution.
3) Seal any entry points for pests.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
The hot holding case was > 60 C.
The dishwasher reached 74C at the plate level.
