Observation: Operator initially described dish washing process with soap and rinse only (no sanitize step)
Corrective Action(s): Operator will use a wash rinse sanitize process using a bucket of bleach water 200 ppm for the final sanitize step.

Observation: Only sink on site is a 2 compartment sink. Initially both side were used for dishes.
Corrective Action(s): Keep 1 compartment free for hand washing, other compartment will be used for wash / rinse, additional wash basin was filled with bleach for sanitizing bleach
