204 - Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)]
Observation (CORRECTED DURING INSPECTION): Staff are reheating foods to 155 degF only. Manager also thought that foods should be reheated to 155 degF.
Corrective Action(s): Foods must be reheated to at least 165 degF before they can be placed in the preheated warmer. They can be stored above 140 degF in the warmer afterwards. Train all staff on proper reheating temperatures. Please signage in the hotholding area if required.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The sanitizer spray bottle had a broken top so the sanitizer wasn't being dispensed properly. Business has a new sanitizer for cleaning the slicer which uses chlorine and not Quats. There was no detectable chlorine in the sanitzer spray bottle meant for the slicer.
Corrective Action(s): Replace the broken sanitizer bottle with a new one. All staff must be trained on how to prepare the chlorine sanitizer solution.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: There's no soap dispenser at the 3-compartment sink. The hand sink is too far away for it to be used for handwashing when staff are preparing foods in the back. There must be soap and single use towels available at the 3-compartment sink for handwashing purposes.
Corrective Action(s): Provide soap in a dispenser at the 3-compartment sink.

Observation: There was no temperature log for today. The food safety procedures for the business are not being followed. Staff have run out of the master copy of the log and none have been printed for use.
Corrective Action(s): Print off more temperature logs and organize the clipboard so that it's more organized.

Observation: Mice droppings noted in the cupboard under the front hand sink.
Corrective Action(s): Remove all items and clean the area. Pest control is on contract but staff couldn't locate the service reports. Have a copy of the last 2 service reports onsite during the follow-up inspection.

Observation: The temperature gauge on the walk-in cooler is not working. It's showing an Error message.

Comments

General Observations:
Foods in the sandwich line cooler are below 4 degC; 2-door undercounter cooler is at 4 degC; beverage cooler's at 3 degC
Walk-in Freezer is at -19 degC; Walk-in cooler's at 4 degC
Hotholding is above 60 degC.
Handsink's fully equipped; washroom sinks are fully equipped.
Manual dishwashing procedures are being followed.
Knives are stored in clean, empty slots under the prep counter. ENSURE THAT IN-USE UTENSILS ARE WASHED/REPLACED EVERY 4 HOURS.
A Pest Control company is on contract.
At least one of the staff on duty has FS Level 1 or equivalent Certification
