Observation (CORRECTED DURING INSPECTION): High-temperature dishwasher only reached 68C at dish surface during rinse cycle. Booster not working (see Violation Code 308). Bleach (chlorine) had been hooked up to rinse aid supply, however no chlorine residual detected at dish surface.
Corrective Action(s): Dishwasher rinse cycle must reach at least 71C at dish surface level (or 82C on rinse temperature gauge). Do not hook bleach up to the rinse aid supply.
All dishes must be sanitized manually in the three compartment sink, with sanitizer from the automatic dispenser. Test strips must be used to monitor the concentration of the sanitizer; a minimum of 200 ppm Quats required. Staff set up sanitizing sink at time of inspection.

Observation (CORRECTED DURING INSPECTION): Hand washing station by beverage station was missing paper towels.
Hand washing station in cook line was missing liquid soap.
Corrective Action(s): Ensure all hand washing stations are properly supplied with liquid soap and paper towels at all times. Extra supplies must be ordered BEFORE running out.
