Observation (CORRECTED DURING INSPECTION): Toppings inside the walk-in cooler were at approximately 7C at time of inspection. Toppings to be used up within the next 2 hours.
Corrective Action(s): All toppings must be kept at 4C or less at all times. Cooler to be adjusted tomorrow morning by technician.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed at the following areas:
1) Back of kitchen next to the trash-can
2) Along the walls behind the door of the washroom
3) In the janitorial room, scattered around the hot water tank and on the shelving
Corrective Action(s): Remove rodent droppings with a strong bleach solution (1 part bleach, 9 parts water). Contact your professional pest control company regarding the rodent droppings.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Areas that need further cleaning:
1) Shelving underneath the prep tables at back-of-house need to be scrubbed as there is accumulating debris.
2) Rack at front-of-house has accumulated caked-on debris.
3) Additional sweeping required behind and beside the stand-up freezers at front-of-house.
Corrective Action(s): Degrease / remove debris from the aforementioned items.

Observation: Cooler is currently at an ambient temperature of 7C.
Corrective Action(s): Reach-in cooler to be adjusted to 4C or less by techician tomorrow morning. NOTE: This cooler must be adjusted and maintained at 4C or less at all times to prevent growth of bacteria that could cause foodborne illness. Follow-up inspection to occur.

Comments

Routine inspection conducted. Facility in generally well organized. The following observations were made:

1. Temperatures
- Prep cooler at approximately 5-6C. Cooler lids were closed at time of inspection
- Beverages display cooler at 4C
- Stand-up cooler up-front at 4C.
-Large reach-in cooler at 7C.(see violation code below)
-Stand-up freezers at -10C and -22C or below.
-Temperature logs maintained; NEW thermometers to be obtained by owner/operator for coolers
-Hot-held rice at 62C. Probe thermometer present for checking temperatures

2. Hygiene and Sanitizing
-Hand wash station up-front stocked with hot/cold running water, liquid soap, and single use paper towels.
-Sanitizing pail and spray bottle present with 200 ppm chlorine residual
-Deli slicer maintained in good sanitary condition

3. Storage
-Bread buns stored in pre-packaged bags inside storage cabinets at front-of-house
-Food products are stored at least 6"off the floor - good
-Chemicals are kept separate from other food products
-Food products inside reach-in cooler are covered appropriate lid

4. Pest Control
-Professional pest control company conducts routine audits. Last inspection revealed no signs of rodent activity

5. Administrative
-Permit posted and up-to-date.
-Operator has FoodSafe 1

Follow-up inspection to occur to check reach-in cooler temperatures.
