305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)] Observation: In dishwashing room, noted several conditions that may indicate pest entry and presence: > Exposed insulation in the wall above the gas meter. > Holes in the ceiling panels, above the electrical panel and above the doorway into the dishwashing room. > Chewed insulation materials found under the prep table. Corrective Action(s): Remove chewed insulation. Ensure all holes, cracks and crevices in this area and throughout the whole facility are sealed to prevent pest entry. Date to be corrected by: 2 weeks. Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: 1) Signuificant food debris observed around the ventilation tube next to the pizza oven. 2) Marinara sauce splatter against the wall under the pizza prep counter. Corrective Action(s): 1) Remove the food debris around the ventilation tube, do not treat this as a bin for food waste. Accumulation of food debris will attract pests such as rodents and ants. 2) Ensure all splatters on the walls are cleaned as soon as possible. Date to be corrected by: 1 week. Violation Score: 3
