Observation (CORRECTED DURING INSPECTION): -reusable wet wiping cloths left on countertops in back prep area during start of inspection
Corrective Action(s): -reusable wet wiping cloths must be in a sanitizer solution in between uses. Wet wiping cloths are a breeding ground for bacteria if left out. Ensure sanitizer bucket is changed regularly throughout the day.

Observation (CORRECTED DURING INSPECTION): 1) Back prep area handsink blocked off with serving cart and large pot of oil
2) Change room handsink contain no paper towels
3) Bar handsink missing soap.
Corrective Action(s): -ensure all handsinks are free from obstructions and easily accessible at all time. Handsinks must be fully stocked with hot/cold water, soap, and paper towels at all times.
This is a repeat violation.

Observation (CORRECTED DURING INSPECTION): 1) cooked shredded chicken stored next to raw meats/seafood in Back walk in cooler
2) seared tuna stored above ready to eat foods in beer walk in cooler
3) ice wand stored on floor of walk in Freezer
Corrective Action(s): 1) ensure all ready to eat foods are stored above raw foods

3) ensure ice wand stored in food grade container

-no obvious signs of pests noted during inspection
-low temp dishwasher @ 50 ppm on plate level using test strips
-sanitizer spray bottles and containers @ 200 ppm Quats using test strips
-temperature logs & dishwasher logs are up to date
-rice hot held @ 67 deg. C
