Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -26C; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 71C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in cloth buckets and in spray bottles had strength of 200ppm. Test strips present. Cloth bucket solution is changed every 2 hours.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins stored separate or below RTE foods; and foods stored 6" off the floor on racks, shelves, or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement seen since last inspection, of the sanitation level. Exhaust canopies next professional cleaning due in May 2024, as per service sticker.
- No signs of pests.
- Valid FoodSafe certified staff present, or they possess a recognized equivalent certificate.
- The sandwich assembly cooler was 11C, but food inserts were being stored on ice to keep food at 4C. A new cooler is on order and in transit, ETA is about 2-3 weeks.
- The insulation around the pipe, beside the donut icing station, has not been replaced and bits of the insulation could fall into food. A contractor has been hired to determine how to replace the insulation and protect it from food stains.

ACTION
1) Instruct staff to only fill food inserts, in the sandwich assembly cooler, 1/2 full as it is difficult for ice to keep foods at the top of inserts at 4C at all times.
2) Replace the insulation around the pipe ASAP, and recommend installing a stainless steel sheet along the length of the pipe to protect it from getting splashed with icing from the donut icing station.
