As discussed during previous inspection, food safety plan ( food flow chart with CCPs) for sous vide food items is outstanding. Please submit
ASAP. In addition, also send food safety plan for all item prepared using smoker ( both cold smoked and hot smoked items).
* Recommended checking pH ( thorough a commercial food testing lab) for all acidified low-acid foods canned on site. You may use commerical pH tester for quality control purposes ( e.g. keeping batch records).
* Use color coded tongs (e.g. red handled) for handling raw poultry and meat items.
* Ensure to monitor and record equipment temperatures and dishwasher final rinse at least once a day.
