Observation (CORRECTED DURING INSPECTION): Observed meat sauce not reheated to 74c or higher prior to being placed in hot holding equipment. Operator mentions the sauce is placed directly into hot holding from the coller. Corrective action. Reheat potentially hazardous foods to 74c or higher within two hours to provide a degree of assurance that pathogens will be eliminated. Operator claims meat sauce was placed in hot holding for 15 minutes. Operator removed the meat sauce and reheated to 74c during inspection and placed within the hot holding unit at 60c.

-Discussed manual dishwashing methods with operator in regards to 3 compartment sink
-Sanitizer solution within bucket contains a cloth measured at 200ppm chlorine
-No pest activity observed during time of inspection.
-No conditions observed that allowed the entry, harbourage or breeding of pests. Observed a screen door surrounding the frame of the back door.
-Overall cleanliness of premise is satisfactory
-Discussed cleaning and sanitizing procedures for mixer
-Discussed cleaning and sanitizing procedures for vegetable slicer
-Chemicals and cleaners stored in a safe manner
-Refrigeration and hot holding equipment have accurate thermometers
-Observed good and frequent hand washing procedures

-Discussed adding chlorine solution in sanitizer buckets to daily records sheet.
