203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 5 3L plastic containers of cooked beans being cooled in the walk in cooler. Temp measured at 50C. Staff on site indicated that the beans were put in 30mins ago. Improper cooling of food could induce microbial growths.
Corrective Action(s): Staff took out the beans and transferred it into a metal pot (all 5 containers) all soaked in ice water bath to assist cooling. Please ensure to always follow proper cooking procedures: 60C-20C in 2hrs, and 20C - 4C in 4hrs. And store at <4C at all time until serving. Some techniques for cooling large quantities of food are:
transfers food in to shallow metal containers and place containers into ice bath to assist with cooking more rapidly. Ensure to monitor cooling temperatures during the process. Transfer the cooled food into individual metal containers and store in coolers at <4C

High temp dishwasher achieved 76C at plate level after final rinse
Coolers and freezer temperature all satisfactory. Recommend staff to sue metal tray inserts to help maintain cold temp
Sanitizer solution available at 200ppm quats. Wiping cloths were stored inside the sanitizer solution
Containers on dry racks observed in sanitary condition

*Ensure to store the take out cups/lids/utensils away from the hand sink at the front to prevent from being contaminated
*CO2 container observed to be not secured on site, ensure to secure the CO2 container at all times.
