Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: All sandwich prep coolers observed with food splaltter build up. Top side of cooler opposite the oven observed with food debris build up on the top side as well as the under side of the lid.
Correction: Thoroughly clean as discussed. Top side and under side of lid to be cleaned daily.

Observation: Meat slicer observed with food debris affixed to the blade. Slicer was not used today
Correction: Ensure staff are trained on how to properly clean and sanitize the slicer after use. Recommend purchasing a cover for the slicer to protect it after it has been cleaned.
