Blocked walk-in freezer during routine inspection noted at -18C or below.
Operator to ensure daily temperature logs are maintained for cooler and freezer units.

Handwashing sinks equipped with hot and cold running water, liquid soap, and single-use paper towels.

Double-stacking observed in walk-in cooler. Operator must educate staff to prevent double-stacking and to ensure foods are protected from contamination with food safe materials. Plastic bags are not food grade and are not to be used to store cooled or frozen foods. Materials must be smooth, non-porous, easily washable, and food safe.

OUTSTANDING: Dry storage area for potatoes and sugar requires cleaning and sanitizing with a dilute bleach solution at 100ppm. Palettes and shelving used must be smooth, non-porous, and easily washable to prevent the attraction of pests. Sticky traps in place to suppress fruit fly activity. Organization required at dry storage area. Items not required for business use are to be removed from premises.

Sanitation items in Code 306 are OUTSTANDING and require immediate attention. Noted areas are to be cleaned and sanitized with a dilute bleach solution at 100ppm as required.
