Observation: Significant pest activity in the premises. Multiple live mice observed in the bakery at time of inspection.
Corrective Action(s): Throughly clean and sanitize all areas of the food premises.
Remove all rodent droppings
Clean up all food spillage (flour, sugar, etc.)
Keep all food ingredients elevated off the floors and stored in pest-resistant containers (eg. plastic bins w/ lids)
Establish a cleaning schedule to maintain the food premises in a sanitary condition
Train employees on the cleaning program.
Follow all recommendations from your pest control technician.

Observation: 1) Infrequently-used and/or unused equipment stored on the premises (eg. bagel maker, dough cutter, etc), creating hiding spaces for rodents
2) Significant amounts of flour and other dry ingredient spillage noted in the dry storage room and on shelves, floor, and equipment throughout the premises, providing food sources for pests.
Corrective Action(s): 1) Remove all non-essential equipment/materials/items from the premises to eliminate harbourage areas for rodents and facilitate cleaning.
2) Increase cleaning standards to ensure food spillage is cleaned/removed by the end of every shift.

Observation: Rodent droppings present on floors and shelves at various locations throughout the premises (underneath desk in the office, floors and shelves in the dry storage room, floors and shelves throughout the bakery, underneath work tables, etc.)
Corrective Action(s): Remove all rodent droppings and food debris.
Thoroughly clean surfaces using a cleaner solution
Sanitize/disinfect surfaces using bleach/water solution.
