302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher again provided zero sanitizer in final rinse. Air bubble present in sanitizer feed line. Several seconds of priming required to fill line.
Corrective Action(s): All dishes to be re-run through washer once fixed. Ensure issue is corrected by a technician by the time of your follow-up inspection.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): Facility lacked hot water during inspection. Hot water temperature was measured at 3 degrees Celsius above cold water temperature (hot measured at approximately 20 degrees C). Staff stated hot water has run out several times during rush periods.
Corrective Action(s): Closure order issued. Restaurant is to remain closed until hot water has been restored, and has been checked by a health officer.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Wine bottles were buried in the ice bin of the ice machine. This represents a possible source of contamination for the ice, which is considered a food item.
Corrective Action(s): Removed. Ensure only ice is kept in this bin - the outside of wine bottles may not be clean, and they additionally represent a potential glass fragment hazard (which will be very difficult to see in the ice). Discard all ice currently in bin.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Hot water tank is not capable of supporting the operational hot water requirements for the kitchen. Water has been running out during lunch rush periods, and low hot water levels were also noted at the previous inspection.
2. [Repeat violation]: Low-temperature dishwasher was not properly feeding sanitizer into final rinse water.
Corrective Action(s): 1. Have tank repaired or replaced by tomorrow (24th June 2016). Do not open the restaurant until fixed and reinspected. Hot water must always be available while the restaurant is operational.
2. Have washer checked again by a technician, and replace any necessary parts to prevent leaks/air bubble formation in the sanitizer lines. Unit must be functioning at follow-up inspection to allow reopening of restaurant.
