Observation (CORRECTED DURING INSPECTION): Container of garlic butter found stored at room temperature at grill area. Garlic butter made with whole fresh garlic cloves that are crushed on site.
Corrective Action(s): Using fresh garlic that has not been acidified and mixed in with margarine/butter poses a risk of botulism. Recommend switching to a jarred pre-crushed fresh garlic that has an acid added to it if this butter is going to be stored at room temperature for any length of time.
