Observation (CORRECTED DURING INSPECTION): The following tray of food were being stored in the front display case at room temperature: steamed Chinese sausage buns, steamed lotus leave rice, shrimp turnover, and steamed vegetable meat buns. Internal temperature was at 23C to 24C
Corrective Action(s): Food product was discarded. Cooked foods either have to be displayed at a temperature greater than 60C to 4C. If foods are going to be cooled prior to being frozen, time and temperature records need to be available for the cooling procedure. Cooked foods must cool from 60C to 20C in the first 2 hrs, then from 20C to 4C in the next 4 hours.

Comments

Routine inspection conducted and the following were noted:
All cooler units less than or equal to 4C and equipped with thermometers.
Freezer units were less than or equal to -18C.
Steam trays and hot oven unit were at least 60C
Hand washing stations satisfactory
All food items stored at least 6inches off the ground.
General sanitation satisfactory and no pest activity noted.
A new chlorine solution was prepared upon inspection. Ensure a 100ppm solution is available and to have all wiping rags stored in the solution at all times. Do not over dilute the solution with bleach. Only mix 25ml of regular unscented bleach with 4 liters of water.
High temperature dishwasher achieved a final rinse temperature of 76C at plate level.
