Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 3 knives stored in red tupperware container under tempura station appeared visibly soiled in oil and bits of tempura batter. Staff stated these knives are used for cutting vegetables.
Correction: Clean and sanitize these knives again. Relocate these knives and other food contact equipment/utensils so that they are protected from contamination while not in use.

Follow-up to inspection report #KLIU-CADUVW:

> Required cleaning has been done. Shelving unit next to tempura station maintained in sanitary condition, surrounding area has some food debris - normal for regular operation.
> Knives that were previously stored below now stored in a knife holder taken from front of house. New knife holder was purchased for front of house.

Note: violation 311 from previous routine inspection report #KLIU-C4NTPP has been corrected. Rubber mat is now placed underneath dishwasher to create a smooth surface that facilitates cleaning.

Reminders moving forward for the new year:
> All received shipments must be relocated into their respective storage ASAP.
> Food stored in the prep cooler that is intended to be discarded everyday MUST be discarded. If kept for personal use, it must be stored separately from other food for business to prevent mistakenly reusing leftovers again.
