The following items have been observed: -->Prep cooler of concern is fixed and temperature is now 3.4oC -->Bar cooler of concern is now at 4.0oC -->No condiment tray is noted at room temperature -->Quats sanitizer is noted at 200ppm from dispensing system -->Quats test strip is stored in chef's office. One of the chefs checks the sanitizer concentration daily and sanitizer concentration is being monitored -->Paper towel is present in dispenser at bar handsink -->No food is noted thawing at room temperature Still outstanding: -->Ventilation exhaust system still requires to be professionally cleaned.
