Frost observed forming along backside interior. Thermometer in unit not working properly. Corrective Action(s): Replace thermometer. Defrost unit and re-check unit to verify it is maintaining temperature less than 4 C. Check defrost cycle is performing properly, service unit as necessary. **interim measure - supplement dairy etc. in unit with ice. Violation Score: 5

Observed build-up of bio-mat slimes in drains (beverage overflow/fruit beverage station). Significant. Some greases and/or food debris noted on parts of dishwasher, under counters, and in floor drain grates. Corrective Action(s): Discussed with manager methods to reduce build up of "fruit fly" breeding environments, including chemical and physical controls. This will be followed up with chemical supplier and cleaning staff. Violation Score: 3
