Observation (CORRECTED DURING INSPECTION): Servery under counter fridge at 8 C. Frost observed forming along backside interior. Thermometer in unit not working properly.
Corrective Action(s): Replace thermometer. Defrost unit and re-check unit to verify it is maintaining temperature less than 4 C. Check defrost cycle is performing properly, service unit as necessary.

Observation: Minor fruit fly population noted at the bar and dish pit stations. Observed build-up of bio-mat slimes in drains (beverage overflow/fruit beverage station). Significant. Some greases and/or food debris noted on parts of dishwasher, under counters, and in floor drain grates.
Corrective Action(s): Discussed with manager methods to reduce build up of "fruit fly" breeding environments, including chemical and physical controls. This will be followed up with chemical supplier and cleaning staff.
