Observation (CORRECTED DURING INSPECTION): A) Hot holding unit for chow mein turned off with noodles observed inside and at room temperature.
B) Deep fried pork and chicken etc. observed in large quantities at room temperature.
Corrective Action(s): Discussed above observations with operator. A) Chow mein forgotten from previous day. *Ensure this food is discarded and all units cleaned and sanitized when not in use. B) Deep fried foods discarded by operator.
**Utilize smaller quantities, limit shelf life to a couple of hours and discard these foods after each rush. Do not reuse such foods.

Observation: The following areas in kitchen receiving inadequate cleaning:
- Walk-in cooler; - floor ad shelves;
- Walk-in Freezer;
- Food prep sink area floor by washing machine station;
Note: Shelving units x2 are in poor condition with rust and food debris accumulating.
Corrective Action(s): Improve cleaning in the above noted areas.
**overall sanitation much better in many sections of facility.
Note: Replace shelving as discussed if cleaning not possible. Replace anything rusty.

Comments

- Pest control contract and work with PCO ongoing. Very few drain flies noted. Drain brush purchased. Ensure drains and surrounding areas are cleaned daily and treated accordingly as per technicians advice.
- Live fish holding records kept and monitoring in place. Continue to adhere to best practices relative to live fish/shellfish holding. OK.
- Improve covering foods in walk-in cooler.
