Observation: Thick grease build-up observed on vents in the back kitchen.
Corrective Action(s): Remove the grease build up and ensure that vents are maintained in sanitary condition to prevent the risk of potential food contamination.

Observation: Operator stated that his FOODSAFE Level 1 has expired. Other staff onsite did not have FOODSAFE Level 1 or equivalent.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Freezer recorded at -14C
- Beverage cooler at 3.7C
- Walk-in cooler at 4C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- 3-compartment sink for dishwashing. 200ppm bleach solution measured in 3rd sink.
- Utensils and tongs were found in good sanitary condition.
- Slushie customer self-serve area was found clean.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.

Note: Operator stated that the facility name has been changed back from "Spice Love" to "Top in Town".
