Observation (CORRECTED DURING INSPECTION): - Mold noted on interior wall of ice machine
Corrective Action(s): - Empty and discard ice. Clean and sanitize interior of ice machine

Observation: - Minor amount of droppings noted along edge floor under dry storage shelving and beside chest freezer. Appears that it may be due to past issues.
- Miscellaneous debris noted under dry storage shelving
Corrective Action(s): - Clean up droppings and disinfect surfaces. Monitor for any further activity (ie droppings, sightings) to establish if it is a current issue. If further rodent activity is noted, contact pest control technician for service.
- Clean up debris under shelving. Keep area clean and clear of debris to prevent creating harbourage spaces for rodents.

Observation: - Temperature inside prep cooler was 10C. Note: No food was stored in cooler at time of inspection.
Corrective Action(s): - Repair prep cooler so that it is in good working order and able to maintain a temperature of 4C or colder.
- Do not store any food in the prep cooler until it is repaired and maintaining 4C or below.

Observation: - Operator not present. Only staff member on duty has not completed Foodsafe level 1 or equivalent.
In the Operator's absence there must be at least one staff on duty who has completed Foodsafe level 1 or equivalent.
This has been a repeat issue.
Corrective Action(s): - Ensure an adequate number of staff have completed Foodsafe level 1 or equivalent to ensure requirement is met.

Comments

- Sanitation of premises satisfactory with the exception of the areas noted above.
- Hot and cold running water was supplied to sinks
- Handsinks were supplied with soap and paper towel
- 3 compartment warewashing sink set up/in use for manual dishwashing. 200ppm chlorine solution present for sanitizing step.
- Clean dishes and utensils were stored in a sanitary manner.
- In use wiping cloth kept in sanitizer solution (200ppm chlorine)
- Reviewed cleaning and sanitizing procedures for fruit cutting equipment > wash, rinse, sanitize, air dry. Ensure in use food equipment and food contact surfaces are cleaned and sanitized at least every 4 hours.
- Coolers were at 4C or colder with the exception of the prep cooler noted above.
- Chest freezer was at -16C
- Staff washroom washroom was supplied with liquid soap and paper towel
