Observation: Fruit flies and drain flies noted throughout (mostly the bar area, however some noted downstairs as well).
Corrective Action(s): Facility already has pest control company servicing on a weekly basis. Please continue to follow their recommendations and ensure to clean and sanitize all surfaces, removing any potential food and moisture sources nightly.

Observation: 1) Accumulation of water/moisture noted in some areas (by chemical buckets in dishwashing area, by ice machine, by mop sink).
2) Leftover food debris noted in the mop sink.
3) Back door in downstairs garbage area/loading dock has a gap and is not properly sealed.
Corrective Action(s): 1) Ensure any water/moisture is mopped up throughout the day. Accumulation of water can attract pests.
2) Clean and sanitize the mop sink nightly. No food debris should be left out overnight.
3) Replace the door seal/sweep for the back door.

Comments

- Routine inspection conducted.
- All hand washing stations were easily accessible/unobstructed and properly supplied with hot/cold running water, liquid soap, and paper towels in dispensers.
- Multi-Quat surface sanitizer available from dispensers, in sanitizer pails, and in spray bottles at 200 ppm. Quat test strips available for monitoring. Facility has temporarily switched from Sink + Surface to Multi-Quat, however will be switching back to Sink + Surface. Sink + Surface test strips also available.
- Sanitizer pails are changed every 2 hours, according to staff.
- Low-temperature chemical conveyor dishwasher (main dishwasher) achieved 100 ppm chlorine residual, detected at the dish surface after final rinse. Chlorine test strips available.
- Glass dishwasher in kitchen dishwashing area achieved 100 ppm chlorine residual, detected at the dish surface after final rinse.
- Glasswasher at bar measured 12.5 - 25 ppm iodine residual. Iodine test strips and kit available.
- Food preparation sinks maintained in sanitary conditions. Proper cooling of bechamel sauce noted at time of inspection (in ice bath, with ice wands). Cooling logs well-maintained.
- All coolers measured 4C or colder.
- All freezers measured -18C or colder.
- Hot-holding of food items at 60C or hotter.
- Temperature logs well-maintained. Accurate thermometers available.
- All thawing of frozen foods occurs in the walk-in cooler.
- In-use utensils stored in ice, and washed in dishwasher every 2 hours. Dipper-well at bar was in use - good.
- Good food storage practices noted. All food stored off the floor, properly covered and labelled, and with good separation between raw and ready-to-eat items.
- Ice machine and scoop maintained in sanitary conditions. Ventilation canopy maintained in sanitary condition. All food-related equipment maintained in sanitary conditions.
- Staff stated prep surface cutting boards are scheduled to be sanded/re-finished down soon. Good.
- Weekly pest control servicing in place. Pest reports available for review, fruit fly and drain fly activity noted inside. No evidence of other pest activity inside the facility at the time of inspection.

Reminders:
- Ensure to sanitize high-touch surfaces such as cooler door handles throughout each day.
- Store clean ice wands wrapped in food wrap, such that they are clean and ready to use when needed.
